This Mexican Street Corn Coleslaw is a vibrant and zesty side dish that combines the crunch of fresh cabbage and carrots with the bold flavors of Mexican street corn. It’s perfect for BBQs, potlucks, or as a refreshing salad on a hot day.

Ingredients

For the Coleslaw:

4 cups shredded cabbage (green or purple)
1 cup shredded carrots
1/2 cup chopped fresh cilantro
1/4 cup chopped red onion
For the Mexican Street Corn Topping:

2 cups corn kernels (fresh, canned, or frozen)
2 tablespoons mayonnaise
2 tablespoons sour cream or Greek yogurt
1/4 cup crumbled cotija cheese (or feta cheese)
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1 clove garlic, minced
Juice of 1 lime
Salt and black pepper to taste
Optional Garnish:

Additional crumbled cotija cheese
Chopped fresh cilantro  Lime wedges

Instructions:

Prepare the Coleslaw:

In a large mixing bowl, combine the shredded cabbage, shredded carrots, chopped cilantro, and chopped red onion.
Toss to combine and set aside.
Char the Corn:

In a skillet over medium-high heat, add the corn kernels and cook until they are lightly charred, stirring occasionally, for about 5-7 minutes.
Make the Dressing:
