Fruity Buttermilk Pancakes
Ingredients:
150g self-raising flour
2 tbsp golden caster sugar
1 tsp baking powder
2 large eggs
284ml buttermilk
25g unsalted butter, melted
150g blueberries
Vegetable oil, for frying
Maple syrup, to serve
Instructions:
Sift the flour, sugar, and baking powder into a bowl.
Whisk the eggs, buttermilk, and melted butter in another bowl.
Combine the wet and dry ingredients, then fold in the blueberries.
Heat a little oil in a frying pan and cook spoonfuls of batter until bubbles form on the surface.
Flip and cook until golden brown.
Serve with maple syrup.
