Ingredients:
2-3 lbs octopus, cleaned
1/2 cup olive oil
1/4 cup red wine vinegar
3 cloves garlic, minced
1 lemon, juiced
1 tsp dried oregano
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Instructions:
Tenderize the Octopus:
Place the cleaned octopus in a large pot of boiling water. Reduce heat to low and simmer for 45-60 minutes, or until the octopus is tender. Remove from the pot and let it cool.
Marinate the Octopus:
In a large bowl, whisk together the olive oil, red wine vinegar, minced garlic, lemon juice, dried oregano, salt, and pepper.
Cut the cooled octopus into serving-size pieces and add them to the marinade. Toss to coat well. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.
Grill the Octopus:
Preheat your grill to medium-high heat.
Remove the octopus from the marinade and grill for 3-4 minutes per side, or until charred and heated through.
