WOULD YOU EAT THIS TREMENDOUS RED LOBSTER SHRIMP SCAMPI
Ingredients:
1 lb large shrimp, peeled and deveined
4 tbsp unsalted butter
2 tbsp olive oil
4 cloves garlic, minced
1/2 cup white wine or chicken broth
1/2 tsp red pepper flakes (optional, for heat)
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 cup fresh parsley, chopped
1 tbsp lemon juice
Salt and pepper to taste
8 oz linguine or spaghetti (cooked according to package instructions)
Instructions:
Cook the pasta: Prepare the linguine or spaghetti according to package instructions. Drain and set aside.
Prepare the shrimp: In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the shrimp and cook for 2-3 minutes on each side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
Make the scampi sauce: In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1 minute, or until fragrant, being careful not to burn the garlic.
Add wine and seasonings: Pour in the white wine or chicken broth, red pepper flakes (if using), oregano, and basil. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to reduce slightly.
Combine and serve: Return the cooked shrimp to the skillet, stirring to coat in the sauce. Add the lemon juice, chopped parsley, and season with salt and pepper to taste. Toss in the cooked pasta and mix well to combine.
