Wings & Bacon Fried Rice

Ingredients:

1 lb chicken wings 
4 slices of bacon, chopped 
2 cups cooked rice (preferably day-old) 
2 eggs, lightly beaten 
1/2 cup frozen peas and carrots 
1/4 cup soy sauce 
2 cloves garlic, minced 
1 tablespoon sesame oil 
1/4 teaspoon black pepper 
Green onions, chopped (for garnish) 
Fresh cilantro, chopped (for garnish) 

Instructions:


Prepare the Chicken Wings:

Preheat your oven to 400°F (200°C). Place the chicken wings on a baking sheet, season with salt and pepper, and bake for 25-30 minutes until crispy and golden brown.

Cook the Bacon:

In a large skillet or wok, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the skillet.

Fry the Eggs:

In the same skillet, add the beaten eggs. Stir constantly until the eggs are scrambled and cooked through. Remove the eggs and set aside.

Sauté the Vegetables:

Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Toss in the frozen peas and carrots and cook for an additional 3-4 minutes until tender.

Combine Everything:

Add the cooked rice to the skillet, breaking up any clumps. Stir in the soy sauce, sesame oil, and black pepper. Mix well to ensure the rice is evenly coated with the seasoning.
Return the bacon and scrambled eggs to the skillet, stirring to combine. Finally, add the baked chicken wings, tossing everything together until the wings are well-coated with the flavorful rice.
