Prepare Ingredients:

Assemble Rolls:
Lay a softened wrapper on a clean, damp surface.
Place a lettuce leaf on the lower third of the wrapper, followed by shrimp halves, vermicelli, mint, cilantro, carrot, cucumber, and bell pepper.
Roll It Up:
Fold the sides of the wrapper inward, then start from the bottom and roll tightly to encase the filling completely.
Final Touches:
Cut each roll diagonally in half and sprinkle with sesame seeds.
Serve:
Arrange the rolls on a plate with a bowl of sweet chili sauce for dipping.
Tips:
Dip each wrapper individually and let it soften as you assemble others to manage your workflow better.
For a varied flavor, add basil or sliced avocado to the filling.
