Crispy Fried Zucchini
Ingredients:
2 medium zucchinis, sliced into rings
1 cup all-purpose flour
2 eggs, beaten
1 cup breadcrumbs (panko for extra crispiness)
1 tsp garlic powder
1 tsp onion powder
Salt and pepper, to taste
Oil for frying
For the Dip:
1 cup sour cream
2 tbsp fresh chives, chopped
1 clove garlic, minced
Salt and pepper, to taste
Instructions:
Prepare the Zucchini: Slice the zucchinis into even rings and set aside.
Setup Dredging Station: In three separate bowls, place the flour seasoned with salt and pepper, beaten eggs, and breadcrumbs mixed with garlic and onion powder.
Dredge: Dip each zucchini ring into the flour, then the egg, and finally coat with the breadcrumb mixture.
Fry: Heat oil in a frying pan over medium-high heat. Fry the zucchini rings in batches until golden and crispy, about 2-3 minutes per side. Drain on paper towels.
Prepare the Dip: While the zucchini is frying, mix sour cream, chives, minced garlic, salt, and pepper in a small bowl.
Serve: Serve the hot zucchini rings with the creamy chive dip.
