Blue & Yellow Floral Royal Icing Cookies
Ingredients:
Cookies:
1 cup unsalted butter, softened
1 cup granulated sugar
1 egg
1 tsp vanilla extract
3 cups all-purpose flour
1 ½ tsp baking powder
½ tsp salt
Royal Icing:
3 cups powdered sugar, sifted
2 large egg whites
½ tsp vanilla extract
Water or lemon juice for thinning
Blue and yellow gel food coloring
Decorations:
Edible pearls
Edible glitter or gold dust
Directions:
Prepare Cookies:
Cream butter and sugar until fluffy. Beat in egg and vanilla.
Combine flour, baking powder, and salt in another bowl. Gradually add to the butter mixture until just combined.
Roll out dough on a floured surface, cut into circles, and bake at 350°F (175°C) for 8-10 minutes. Cool completely.
Make Royal Icing:
Beat egg whites until frothy. Gradually add powdered sugar and vanilla, beating until stiff peaks form.
Divide icing into portions and tint with blue and yellow food coloring. Adjust consistency with water or lemon juice for piping.
Decorate:
Pipe base layer in white or light blue on each cookie. Let set slightly.
Use darker blue and yellow icing to create floral designs, employing various piping tips to achieve petals and floral patterns.
Accent with edible pearls and a touch of edible glitter or gold dust for sparkle.
Tips:
Consistency is Key: Achieve perfect piping consistency by adding liquid gradually—too thin, and it will run; too thick, and it won’t flow smoothly.
Drying Time: Allow the base layer of icing to dry slightly before adding designs on top to prevent colors from bleeding.
