Pumpkin Pie Cookies Recipe

Ingredients

For the Cookie Dough:
1 cup unsalted butter, softened 
1 cup brown sugar, packed 
1/2 cup granulated sugar 
1 large egg 
1 teaspoon vanilla extract 
2 cups all-purpose flour 
1 teaspoon baking powder 
1 teaspoon baking soda 
1 teaspoon ground cinnamon 
1/2 teaspoon ground nutmeg 
1/4 teaspoon ground ginger 
1/4 teaspoon salt 
For the Pumpkin Filling:

1 cup canned pumpkin puree 
1/2 cup granulated sugar 
1/2 teaspoon ground cinnamon 
1/4 teaspoon ground nutmeg 
1/4 teaspoon ground ginger 
1/4 teaspoon salt 
1 tablespoon cornstarch (optional, for thickening)

Instructions

1. Prepare the Cookie Dough:

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. 
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. 
Beat in the egg and vanilla extract until well combined. 
In another bowl, whisk together the flour, baking powder, baking soda, spices, and salt. 
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix! 
2. Prepare the Pumpkin Filling:

In a separate bowl, combine the pumpkin puree, granulated sugar, spices, salt, and cornstarch (if using). Mix until smooth and well blended. 
3. Assemble the Cookies:

Using a cookie scoop or tablespoon, drop a spoonful of cookie dough onto the prepared baking sheet, leaving enough space between each cookie. 
Make a small indentation in the center of each cookie and fill it with about a teaspoon of the pumpkin filling. 
You can cover the filling with a little more cookie dough if desired, or leave it open for a more rustic look. 
4. Bake the Cookies:

Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the centers are set. 
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. 
5. Serve and Enjoy:

Serve the cookies warm or at room temperature. Enjoy them with coffee, tea, or your favorite beverage! 
Tips:

You can add chocolate chips, nuts, or other spices to the cookie dough or filling for variations.
