Ingredients:
8 oz cream cheese, softened
1 cup pumpkin puree
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
1 cup graham cracker crumbs (plus extra for coating)
½ cup powdered sugar
1 ½ cups white chocolate chips (for dipping)
Instructions:
In a large bowl, beat together the softened cream cheese, pumpkin puree, vanilla extract, pumpkin pie spice, graham cracker crumbs, and powdered sugar until smooth and well combined.
Refrigerate the mixture for 30 minutes to firm up.
Once chilled, roll the mixture into small balls, about 1 inch in diameter.
Roll each ball in additional graham cracker crumbs for coating.
