WOULD YOU EAT THIS TREMENDOUS COUNTRY RANCH GREEN BEANS ‘N POTATOES
Ingredients:
1 lb baby potatoes, halved
1 lb fresh green beans, trimmed
3 tablespoons olive oil
1 packet ranch seasoning mix
3 cloves garlic, minced
1/2 teaspoon dried thyme
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Prepare the Potatoes:
Preheat your oven to 400°F (200°C).
Toss the halved baby potatoes in 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
Roast the Potatoes:
Roast the potatoes in the preheated oven for 20 minutes.
Prepare the Green Beans:
While the potatoes are roasting, toss the green beans with 1 tablespoon of olive oil, salt, pepper, and ranch seasoning mix.
Add to the Potatoes:
After the potatoes have roasted for 20 minutes, add the green beans to the baking sheet. Toss everything together to combine.
Roast Everything Together:
Return the baking sheet to the oven and roast for an additional 15-20 minutes, or until the potatoes are tender and the green beans are crisp-tender.
Add Garlic and Thyme:
In the last 5 minutes of roasting, sprinkle the minced garlic and dried thyme over the vegetables.
Serve:
Remove from the oven and garnish with chopped fresh parsley before serving.
