Greek Chicken Gyros

Ingredients
For the Chicken Marinade:
1 lb boneless, skinless chicken breasts
1/4 cup olive oil
2 tbsp lemon juice
3 cloves garlic, minced
1 tbsp red wine vinegar
1 tbsp dried oregano

1 tsp ground cumin
1 tsp paprika
Salt and pepper, to taste
For the Gyros:
4 pita breads or flatbreads
1 cup romaine lettuce, chopped
1/2 cup cherry tomatoes, sliced
1/4 red onion, thinly sliced
Tzatziki sauce (store-bought or homemade)
Fresh parsley, chopped (for garnish)


Directions
Marinate the chicken: In a bowl, whisk together olive oil, lemon juice, garlic, red wine vinegar, oregano, cumin, paprika, salt, and pepper. Add the chicken breasts and coat them in the marinade. Cover and refrigerate for at least 30 minutes, preferably 2-3 hours for maximum flavor.
Cook the chicken: Preheat your grill or a grill pan over medium-high heat. Remove the chicken from the marinade and grill for 5-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (74°C). Let the chicken rest for a few minutes before slicing into thin strips.
Assemble the gyros: Warm the pita breads in a dry skillet or directly over a gas flame until soft and pliable. Place a layer of chopped romaine lettuce on each pita, followed by sliced chicken, cherry tomatoes, and red onion. Drizzle generously with tzatziki sauce and sprinkle with fresh parsley.
