Lemon Tartlets
Ingredients:
For the Base:
2 cups all-purpose flour
4 tablespoons margarine
1 tablespoon baking powder
1 pinch of salt
1 egg yolk
3 tablespoons sugar
Milk (as needed, optional)
For the Filling:
1 can sweetened condensed milk
1 box heavy cream
Juice of 2 lemons (or more, depending on size)
Preparation:
For the Base: In a large mixing bowl, combine the flour, baking powder, salt, and sugar. Add the margarine and mix until the mixture resembles coarse crumbs.
Add the egg yolk and mix well. If the dough is too dry, gradually add a little milk until it comes together into a smooth dough.
Roll out the dough on a lightly floured surface and cut into circles to fit your tartlet molds. Press the dough into the molds and prick the bottoms with a fork.
Preheat your oven to 350°F (180°C) and bake the tartlet shells for about 10-15 minutes, or until golden brown. Remove from the oven and let them cool completely.
For the Filling: In a bowl, mix the sweetened condensed milk, heavy cream, and lemon juice until smooth and thickened.
Spoon the lemon filling into the cooled tartlet shells. Refrigerate for at least 2 hours before serving to allow the filling to set.
