Bacon Cheeseburger Meatloaf
Ingredients:
1 1/2 lbs ground beef
8 slices of bacon, cooked and crumbled
1 cup sharp cheddar cheese, shredded
1/2 cup bread crumbs
1/4 cup ketchup
1/4 cup mustard
2 tablespoons Worcestershire sauce
1 onion, finely chopped
2 cloves garlic, minced
2 eggs, beaten
Salt and pepper to taste
For the Topping:
1/2 cup ketchup
1 tablespoon mustard
2 tablespoons brown sugar
Instructions:
Preheat Oven:
Preheat your oven to 375°F (190°C).
Prepare the Meatloaf Mixture:
In a large mixing bowl, combine the ground beef, crumbled bacon, shredded cheddar cheese, bread crumbs, ketchup, mustard, Worcestershire sauce, finely chopped onion, minced garlic, and beaten eggs. Season with salt and pepper to taste.
Mix everything together until well combined but be careful not to overmix.
Shape and Bake:
Transfer the meatloaf mixture into a loaf pan, pressing it down to form an even loaf shape.
Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
Prepare the Topping:
While the meatloaf is baking, mix together the ketchup, mustard, and brown sugar in a small bowl.
After 45 minutes of baking, remove the meatloaf from the oven and spread the topping mixture evenly over the top.
Finish Baking:
Return the meatloaf to the oven and bake for an additional 10-15 minutes, or until the topping is bubbly and caramelized.
Serve:
Let the meatloaf rest for a few minutes before slicing.
