Ingredients:
Meatloaf:
1 1/2 lbs ground beef
1/2 lb ground pork
1 small onion, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs
1/2 cup milk
2 large eggs
1 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
1/2 tsp dried oregano
1/4 cup ketchup (for topping)
Gravy:
2 tbsp unsalted butter
2 tbsp all-purpose flour
2 cups beef broth
1 tbsp Worcestershire sauce
Salt and black pepper to taste
Mashed Potatoes:
4 large potatoes, peeled and cubed
1/2 cup milk
4 tbsp unsalted butter
Salt and black pepper to taste
Instructions:
Prepare the Meatloaf:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
In a large bowl, combine the ground beef, ground pork, chopped onion, minced garlic, breadcrumbs, milk, eggs, Worcestershire sauce, salt, black pepper, dried thyme, and dried oregano. Mix until well combined.
Shape the mixture into a loaf shape and place it on the prepared baking sheet or in the loaf pan.
Spread the ketchup evenly over the top of the meatloaf.
Bake in the preheated oven for 60-70 minutes, or until the internal temperature reaches 160°F (71°C). Let the meatloaf rest for 10 minutes before slicing.
Prepare the Mashed Potatoes:
While the meatloaf is baking, place the peeled and cubed potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Add the milk and butter, and mash until smooth and creamy. Season with salt and black pepper to taste.
Prepare the Gravy:
In a medium saucepan, melt the butter over medium heat.
Stir in the flour and cook for 1-2 minutes to form a roux.
Gradually whisk in the beef broth and Worcestershire sauce. Bring to a simmer and cook until the gravy thickens, about 5-7 minutes.
Season with salt and black pepper to taste.
