WOULD YOU EAT THIS TREMENDOUS TUSCAN CHICKEN
Ingredients:
4 boneless, skinless chicken breasts
2 tbsp olive oil
Salt and pepper to taste
1/2 cup all-purpose flour (for dredging)
1/2 cup sun-dried tomatoes, chopped
2 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 cup baby spinach
1 tsp dried basil
1 tsp dried oregano
1/4 tsp red pepper flakes (optional, for heat)
Instructions:
Prepare the chicken: Season the chicken breasts with salt and pepper. Dredge each breast in flour, shaking off excess.
Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Make the sauce: In the same skillet, add a bit more olive oil if needed. Sauté the sun-dried tomatoes and garlic for 1-2 minutes until fragrant. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the skillet. Stir in the heavy cream, Parmesan cheese, dried basil, oregano, and red pepper flakes (if using). Simmer for 2-3 minutes until the sauce thickens slightly.
Add spinach: Stir in the baby spinach and cook until wilted, about 1-2 minutes.
Combine and serve: Return the chicken breasts to the skillet, spooning the sauce over the top. Simmer for an additional 2-3 minutes until the chicken is heated through and coated with the sauce.
Serve: Plate the Tuscan chicken and spoon extra sauce over the top. Enjoy with your favorite sides, such as pasta, rice, or a fresh salad.
