Herby Cauliflower Fritters 

Ingredients:

1 small cauliflower, grated
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese (optional for extra flavor)
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
2 cloves garlic, minced
2 eggs, beaten
1/2 tsp ground cumin
Salt & pepper to taste
Olive oil for frying

Instructions:

Prep: Grate the cauliflower into fine pieces. You can use a food processor to speed up the process.
Mix: In a large bowl, combine grated cauliflower, breadcrumbs, Parmesan (if using), parsley, cilantro, garlic, cumin, eggs, salt, and pepper. Mix until well combined.
Form: Shape the mixture into small patties or balls, about the size of a golf ball.
Cook: Heat olive oil in a large skillet over medium heat. Fry the fritters in batches until golden brown on both sides, about 3-4 minutes per side.
Serve: Drain on paper towels and serve hot over a bed of greens with pickled red onions. Drizzle with your favorite sauce or a simple yogurt dip.
