WOULD YOU EAT THIS TREMENDOUS VIETNAMESE FRIED CHICKEN WINGS FEAST
Ingredients:
For the Chicken Wings:
2 lbs chicken wings, separated into flats and drumettes
Salt and pepper to taste
1/2 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon garlic powder
1 teaspoon onion powder
Vegetable oil for frying
For the Marinade:
1/4 cup fish sauce
2 tablespoons soy sauce
2 tablespoons brown sugar
3 cloves garlic, minced
1 tablespoon grated ginger
1 teaspoon chili paste (optional for heat)
For the Glaze (optional but recommended):
1/4 cup honey
2 tablespoons fish sauce
1 tablespoon lime juice
1 tablespoon soy sauce
1 teaspoon grated ginger
1 clove garlic, minced
For Garnish:
Fresh cilantro, chopped
Sliced green onions
Lime wedges
Instructions:
Marinate the Wings:
In a large bowl, combine fish sauce, soy sauce, brown sugar, minced garlic, grated ginger, and chili paste (if using). Add the chicken wings and toss to coat evenly.
Cover and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
Prepare for Frying:
In a separate bowl, mix together flour, cornstarch, garlic powder, and onion powder. Remove the wings from the marinade and toss them in the flour mixture, ensuring they are well-coated. Shake off any excess flour.
Fry the Wings:
Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C). Fry the chicken wings in batches, being careful not to overcrowd the pan. Cook for 8-10 minutes, or until golden brown and crispy. Use a slotted spoon to remove the wings and drain on paper towels.
Prepare the Glaze (optional):
In a small saucepan, combine honey, fish sauce, lime juice, soy sauce, grated ginger, and minced garlic. Heat over medium heat, stirring frequently, until the glaze has thickened slightly.
Glaze the Wings (optional):
If using the glaze, toss the fried wings in the glaze until well-coated. Alternatively, you can brush the glaze over the wings before serving.
Garnish and Serve:
Garnish the wings with chopped fresh cilantro and sliced green onions. Serve with lime wedges on the side.
Enjoy:
Serve your Vietnamese fried chicken wings as an appetizer or main dish with rice or a light salad.
