Loaded Baked Potato with Steak Bites

Ingredients:
– 4 large russet potatoes
– 2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)
– 4 tablespoons olive oil
– 1 ½ cups heavy cream
– 2/3 cup grated parmesan
– 6 tablespoons softened butter
– 2 tablespoons cajun seasoning (low sodium)
– 2 tablespoons garlic, minced
– 2 wedges lemon (juice)
– 1 ½ tablespoons sea salt
– 2 teaspoons kosher salt
– 1/2 – 1 teaspoon red pepper flakes
– 1 teaspoon freshly cracked pepper
– 2 tablespoons avocado oil
– 2 tablespoons minced fresh parsley
Instructions:
1. Preheat the oven to 425°F (220°C). Scrub and dry the potatoes, then rub with olive oil and sea salt. Bake for 50-60 minutes until tender.
2. Cut the steak into 2″ pieces and season with cajun seasoning and kosher salt.
3. In a skillet, heat avocado oil over medium-high heat. Cook steak for about 4 minutes until golden, then add butter and garlic, sautéing until fragrant. Remove steak and keep warm.
4. In the same skillet, stir in remaining butter and garlic, then add heavy cream. Simmer and whisk in parmesan, red pepper flakes, and season with salt and pepper.
