Loaded Baked Potato with Steak Bites

**Ingredients:**
– 2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)
– 1 ½ cups heavy cream
– 4 large russet potatoes
– 6 tablespoons butter
– 4 tablespoons avocado oil
– 2 tablespoons cajun seasoning
– 2 tablespoons garlic, minced
– 2/3 cup grated parmesan cheese
– 2 teaspoons kosher salt
– 2 tablespoons fresh parsley, minced
– Juice of 2 wedges lemon
– Sea salt and freshly cracked pepper to taste
– ½-1 teaspoon red pepper flakes
**Instructions:**
1. Preheat your oven to 425°F (220°C). Scrub and clean the potatoes, then rub them with olive oil and sea salt. Bake for 50-60 minutes, until tender.
2. While the potatoes bake, cut the steak into 2-inch pieces and toss with 2 tablespoons of avocado oil and cajun seasoning.
3. In a cast iron skillet over medium-high heat, cook the steak for 2 minutes until golden; flip and cook for another 1 minute. Reduce heat to low, add 2 tablespoons of butter and garlic, and toss the steak to coat in the garlic butter.
4. In the same skillet, add the remaining 4 tablespoons of butter and heavy cream. Simmer, whisking in the parmesan cheese, red pepper flakes, and lemon juice until thickened.
5. After baking, cut open the potatoes, fluff the insides with a fork, and top with steak bites and creamy sauce. Garnish with parsley and serve hot!
