Strawberry Syrup
Ingredients:
2 cups fresh strawberries, hulled and sliced
1 cup granulated sugar
1/2 cup water
1 tablespoon lemon juice
Directions:
In a medium saucepan, combine strawberries, sugar, and water.
Bring the mixture to a boil over medium-high heat, stirring occasionally.
Once boiling, reduce the heat to low and simmer for 10 minutes, or until the strawberries are soft and the syrup has thickened slightly.
Remove from heat and stir in lemon juice.
Strain the syrup through a fine mesh sieve to remove the strawberry chunks, pressing gently to extract all the juices.
Allow the syrup to cool completely before transferring to a clean bottle or jar.
Store in the refrigerator for up to two weeks.
