Quick Cashew Chicken

Ingredients:

1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
2 tablespoons vegetable oil
1 red bell pepper, chopped
1/2 cup roasted cashews
1 onion, chopped
2 cloves garlic, minced
1/2 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon grated fresh ginger
1/2 cup chicken broth
2 green onions, sliced for garnish
Salt and pepper to taste

Directions:

Heat the oil in a large skillet over medium-high heat.
Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
Remove chicken and set aside. In the same skillet, add the red bell pepper and onion, sautéing until soft, about 3-4 minutes.
Add the garlic and ginger and cook for an additional minute.

Return the chicken to the skillet and stir in the hoisin sauce, soy sauce, and chicken broth. Bring to a simmer.
Add the cashews and cook for another 2-3 minutes until everything is heated through and sauce thickens slightly.
Garnish with green onions before serving.
